Well, there's one more food that conjures up memories for me. It's a recipe that my paternal grandmother passed down to my mom because my dad was such a big fan of them. It's a recipe for Salmon Patties. Have you ever heard of them? I grew up eating them a lot and I make them fairly often for my family. Chris and the girls love them and Abby requests them nearly every time Chris is on the road. So, I thought I'd share the recipe with you.
Salmon Patties:
1. You need one can of Pink Salmon.
2. Dump the entire can into a mixing bowl and remove the scales (that's just what I prefer).
3. Add one egg to the salmon and mix well.
4. To that mixture, add about 10-15 crushed saltine crackers; mix well. Add salt and pepper to taste.
5. Form the mixture into about 6 hamburger size patties. Add a small amount of cooking oil to a frying pan (I use Canola oil) and fry the patties on each side until golden brown.
6. I, usually, eat mine with a dash or two of soy sauce sprinkled on top. I serve them with a side of green beans, corn, mac-n-cheese, brown rice, mashed potatoes, or a salad. Mmm, mmm...GOOD!

Instead of saltines I make them with corn meal and self-rising flour. We had them just last week. I can remember when my Mom made them we always had macaroni & cheese, and green beans with them. Go figure.

When I saw the can of Double "Q" Pink Salmon, I had to laugh because we have a can of it that we have had for over 16 years. Yes, I said 16 years. My husband bought it when we were dating and never used it and it has moved with us each time and just sits in the back of the cabinet.

Yep we eat these at our house also...must try your recipe...grandma does hers a little different. Never heard of adding soy sauce but going try that idea.

My mom always made these, too...especially during Lent. She also made a cream sauce with peas that we poured over the patties. Mmmmmm. I think they were basically made the way yours are, I can't remember. I have to try your recipe!

My husband is Australian and grew up eating these with the cream sauce and peas on top. Here in Munich, all of the salmon is canned with paprika sauces, so when we go back to the states, we buy the foil packets of salmon that have all of the air removed. (I know there is a name for these, but I can't think of it right now.) You can only take 2 cans of Salmon in your suitcase, but unlimited amounts in the foil packets. We love Salmon patties, with or without the sauce.
My parents always made salmon patties when we were younger. I now make them a lot! I think I'll be making them again soon after reading this! :)
Oh yes, I love me some salmon patties too, April!They were one of the staples of my childhood. This may sound freaky to some people, but I remember my grandmother while she was making them would pick out the little bones and eat them! (Not the sharp ones...) And guess what- I do the same thing now!

I love salmon patties I am the only one in my family that does so every time my mom makes them she will save me one :)
I used to love these as a kid-my mom called them salmon croquettes and we liked to dip them in ketchup. I made them once about 30 years ago and honestly the bones sorta creeped me out. I think it was because I wasn't expecting to see them in a can. I might have to try again!

I prepare them the exact same way April. Except now, I use oatmeal (to avoid the white flour from the crackers). Once upon a time I would batter them with flour, but now I just put them in the oil (or cook them in the George Foreman Grill).
Instead of Soy Sauce, I use vinegar. YUM!!!!

i love salmon patties i will have to try this recipe, mine calls for bread crumbs but i bet the saltines would add a little salty goodness.
Yep and Yep...grew up eating them and making them. I hated making them, though. Picking out the bones was a royal pain in my rear!
Mmmm, I love salmon patties and they remind me of childhood too. I haven't made them in forever and after reading this, I made myself a note to make some for dinner tonight!
My Dad made something very similar but using mackarel and bread crumbs. I do not like salmon or any kind of fish but I will eat mackeral and tuna. I have made mackarel cakes for Bryan and he loves them. I haven't made them in awhile. I'll have to add that to our menu soon!
Ah, yes! Comfort food. In our house, it was Shepherd's Pie, Broccoli Chicken Casserole and Roast Chicken with Stove Top Stuffing and Mashed Potatoes!
